Cranberry macadamia scones and a cran-orange rosemary mocktail
Two low-sugar recipes for the new year
Happy holidays! We’re taking it easy today after a fun-filled Christmas with family. This was our first Christmas with my sister-in-law’s family, who recently moved to the area, and my kids’ first Christmas spent with their cousins. There’s nothing better than a house full of happy kids running around in matching Christmas PJs. My heart is full and today, we’re enjoying the welcome lull in these last few days of the year, when there are fewer commitments, fewer deadlines, and more time for rest.
I hope you’re having a wonderful holiday, too. Looking ahead to the New Year, I have changed things up a bit this week. Instead of a dinner recipe, I’m sharing a low-sugar mocktail and a low-carb scone recipe so you’re covered for a festive NYE celebration and a fun New Year’s brunch.
I made these mocktails for Christmas and they work just as well with a splash of Prosecco or wine, if you choose. They’re sweetened with a rosemary simple syrup which takes just two simple steps, and are a deliciously fresh combination of cranberry juice, freshly-squeezed orange juice, and a sparkling water (I used Spindrift). Perfect for any holiday festivities you have coming up this week!
And these scones… I have recipes for both lemon blueberry scones and savory scones on the blog, but I made some changes to my base recipe to create this version: a cranberry macadamia nut scone with a hint of orange.
Serve them warm with some butter or a spoonful of this olive oil lemon curd on the side.
Both recipes are available below to paid subscribers. Thank you so much for supporting this newsletter! It really is a labor of love and I am so grateful for everyone who values these recipes.
I’m keeping things short this week. I hope you have a restful last few days of December, and a very happy new year!
